Flenjes (small pancakes or "crepes") (Flemish Farmers' Wives Cookbook)

Ingredients:

 200g self-rising flour
 1/2 liter milk
 30g granulated sugar (white)
 1 packet of vanilla sugar
 4 eggs (the amount of eggs used may be decreased)
 50g butter

Algorithm:

 Sift the flour and mix it with the sugar.
 Make a small dip in which you put the eggs and milk (you may want to heat the
 milk and butter together to make mixing easier).
 Gently mix the flour eggs and butter to a homogeneous mass.

 Make thin pancakes in a hot pan in which the butter is melted.
 Put sugar, jam etc. on the pancakes.

Flensjes are used a dessert (they are sweet and are thus not suited for 
putting meat etc. inside).

Note by HV: best when flambeed and served with ice-cream.


[ & if you're feeling ambitious: ] Orange Sauce

Ingredients for the above amount of flensjes:

 20 lumps of sugar
 2 oranges
 1 lemon

Rub sugar over the peel of the oranges and lemon.
Squeeze out the oranges and lemon, boil the sugar and juice.
Dip the hot flensjes in this boiling juice and roll them.
