Recipe for Batata Wada (from Sangita Pitre)

Ingredients:
  potatoes (1kg)
  onions (4)
  garlic (2)
  ginger (small piece)
  green chillies (1/2 green pepper) 
  coriander
  turmeric (curcuma)
  gram flour
  frying oil (sunflour, ...)

Method:

1. Cook the potatoes. While they are cooking, cut the onions (not too fine).
   Make a mixture of grated ginger, garlic & finely chopped green pepper &
   keep aside. The green pepper need not be a very hot one- used only for
   the flavour. Wash & finely chop the fresh coriander.
2. Cut the cooked potatoes in small pieces & keep aside. In a wok, first
   fry the onions in about 1 table spoon of oil. When the onions are done
   (very lightly browned), add turmeric powder(less than half a tea spoon-
   used mainly for the colour- can also do without it altogether) & (low 
   flame now onwards) the mixture of ginger+garlic+pepper & mix properly.
   Finally add the potatoes with salt and red chilli powder (cayenne pepper)
   to taste.  After mixing properly, turn off the flame & allow it to cool.
   Add the finely chopped coriander to it.
   Add a pinch of sugar and squeeze a bit of lemon on top and shape into small
   balls which are fried after being rolled in the batter of gram flour.
   (like "beignets")
3. Prepare for the batter: Take approx 2 cups of gram flour in a bowl. Add
   salt, cayenne pepper, turmeric, a pinch of cooking soda(soda bicarb? can
   also do without it), also 2-3 table spoons of rice flour if possible.
   Add water little by little to make a smooth batter(no lumps).

Serving:
   They are served as snacks along with a chutney of coriander or mint or
   any other sauce which you prefer.
